Matthew Dombos, a Glendale resident and a chef at Midori Fusion Japanese Restaurant in Mequon, will take over the Grace Bagel & Deli at the 100 East building in downtown Milwaukee and will convert it into Fusion Sushi and Deli.
The menu for the restaurant will be similar to Grace Bagel & Deli, with the addition of sushi items, Dombos said.
The restaurant is a small take out restaurant, located on the second floor of the building at 100 E. Wisconsin Ave.

Fusion Sushi and Deli is expected to open on Jan. 4, Dombos said. It will be open from 7 a.m. to 3:30 p.m.
The 100 East building is a 37-story office tower located at the northwest corner of Water Street and Wisconsin Avenue in downtown Milwaukee.
