
A new pizza restaurant could open in the space that formerly housed Mad Dog Saloon in Greenfield.
Uncle Paulieโs Brick Oven Pizzeria would occupy a one-story building, located at 4395 S. 76th St. Greenfieldโs Plan Commission on June 12 recommended approval of the restaurantโs site, landscaping and floor plans.
If the plans are approved by the cityโs Common Council, owners Jack Riccobono and Frank Orcholski plan to open the restaurant by early July. Uncle Paulieโs will use a rotating brick ovenโ the only one of its kind throughout Wisconsin, Riccobono saidโ to cook its signature pizzas.
โThere is really nothing like this for 25 to 30 minutes from the area,โ Riccobono said.
In addition to pizza, the restaurant will serve a variety of appetizers, salads, and pastas. It will also feature an extensive wine list with wine from around the world, and craft beer. Uncle Paulieโs will be open daily for lunch and dinner, offering seating for 174 people
Renovations on the buildingโs interior started in February or March, Riccobono said. When the improvements are complete, the restaurant will be unrecognizable from what it once looked like, he said.
The building has sat vacant since Mad Dog Saloon closed last year. According to its Facebook page, Mad Dog Saloon announced in July it would temporarily close for building repairs, but it appears the bar remained permanently closed. In January, it announced it was selling its tables, chairs or bar stools.
