Bartolotta to open another Greendale restaurant

The Bartolotta Restaurants will add a new fast-casual concept to their lineup of Milwaukee-area restaurants early next month when they open Miss Beverly’s Deluxe Barbeque next-door to Joey Gerard’s in the village of Greendale.

Miss Beverly’s will serve house-smoked barbeque influenced by a variety of styles from across the United States. The menu will feature barbequed pork and ribs, beef brisket, fried chicken, fish fry and traditional sides such as cornbread, macaroni and cheese, collard greens and more.

In fast-casual fashion, guests will order at the counter and have their food brought out to them. Customers also will be able to order online for fast carryout. Catering will also be a big component of Miss Beverly’s business, making it easy for locals to serve up delicious barbecue and all the fixings at their family get-togethers, office parties, showers, picnics and other gatherings.

John Wise, director of operations for Bartolotta’s, played a key role in the decision to open a barbeque joint. Wise is a lifelong barbeque aficionado and spent four years managing a barbeque restaurant called Bones in Chicago in the 1980s. Wise had suggested the concept for years to owner Joe Bartolotta, who finally agreed.

“Barbeque has long been something we’ve wanted to do as a company, and now seemed like the right time,” Bartolotta said. “We have the space, and barbeque is a popular and timeless option. We’ve been experimenting and doing our research, and we’re very much looking forward to debuting Miss Beverly’s.”

All meats will be cooked in a smoker and then finished off in an infrared broiler, giving the meat a charred outside and sealing in the smoky flavor. Specialty sodas, sweet tea, beer and wine will be available at Miss Beverly’s, and guests will also have access to the full bar at Joey Gerard’s if they’d like to enjoy a cocktail with their meal.

Joey Gerard’s general manager Mike Besson will oversee operations at Miss Beverly’s.

“Mike hails from Louisiana, and that Southern charm and hospitality that makes him such an asset to Joey’s and to our whole company will be a perfect match for the feeling we’re going for at Miss Beverly’s,” Bartolotta said.

The interior of Miss Beverly’s will be casual and understated, with concrete floors, weathered walls and a nostalgic feel. Bartolotta’s expects construction to move quickly, with Miss Beverly’s opening in early June.

The Bartolotta Restaurants is a Milwaukee-based restaurant group owned by brothers Paul and Joe Bartolotta. The company owns and operates 15 restaurants and catering facilities. Two premier special event spaces in Milwaukee, including Pier Wisconsin at Discovery World and the historic Grain Exchange, round out the group’s offerings.
