New pizzeria proposed for former Mad Dog Saloon in Greenfield

A new pizza restaurant could open in the space that formerly housed Mad Dog Saloon in Greenfield.

Uncle Paulie’s Brick Oven Pizzeria would occupy a one-story building, located at 4395 S. 76th St. Greenfield’s Plan Commission on June 12 recommended approval of the restaurant’s site, landscaping and floor plans.

If the plans are approved by the city’s Common Council, owners Jack Riccobono and Frank Orcholski plan to open the restaurant by early July. Uncle Paulie’s will use a rotating brick oven– the only one of its kind throughout Wisconsin, Riccobono said– to cook its signature pizzas.

“There is really nothing like this for 25 to 30 minutes from the area,” Riccobono said.

In addition to pizza, the restaurant will serve a variety of appetizers, salads, and pastas. It will also feature an extensive wine list with wine from around the world, and craft beer. Uncle Paulie’s will be open daily for lunch and dinner, offering seating for 174 people

Renovations on the building’s interior started in February or March, Riccobono said. When the improvements are complete, the restaurant will be unrecognizable from what it once looked like, he said.

The building has sat vacant since Mad Dog Saloon closed last year. According to its Facebook page, Mad Dog Saloon announced in July it would temporarily close for building repairs, but it appears the bar remained permanently closed. In January, it announced it was selling its tables, chairs or bar stools.
