Chitko to replace Garcia at Hotel Metro

John Chitko will replace Jerry Garcia as the executive chef at Milwaukee’s Hotel Metro next week. Garcia previously announced his departure to pursue other endeavors and to spend more time with his family.
“Jerry came to us at the perfect time,” said Sue Kinas, general manager, Hotel Metro. “We absolutely understand and appreciate his wish to spend time with his children and respect his desire to pursue his dreams. When one door closes, another opens, and behind the new door we are pleased to introduce Executive Chef John Chitko.”
Chitko was formerly co-owner and chef of Yaffa Restaurant and Lounge, located at 106 W. Wells St.
His restaurant featured a menu with a wide range of flavors including Middle Eastern, French, Spanish, Italian and flavors from North Africa as well.
“Hotel Metro has such a unique and specific brand identity, and we saw this as an opportunity to further twist the classics and present guests a menu that is unique,” said Kinas. “I have great anticipation to see where Chef Chitko will take our menu over the next few months.”
During his tenure, Garcia expanded the menu at Hotel Metro to focus on organic and Midwestern fusion.
“I’m looking to introduce a diverse menu of healthy, ethnically-inspired items, but items that are most requested by our customers,” said Chitko. “The opportunity Hotel Metro has given me is truly a canvas for my art work and I look forward to creating a wonderful masterpiece for all to enjoy.”
