Milwaukee-based coffee retailer Colectivo Coffee plans to open a restaurant in a former neighborhood gas station on North Avenue in Wauwatosa.
The Ruckus, at 8334 North Ave., is being dubbed by Colectivo owners as a “classic neighborhood ice cream and burger stand.” If approved, the restaurant will offer a small selection of grilled items, house-made churros, shakes and beer, according to plans submitted to the city.
It would have indoor seating for 66 and outdoor seating for 90. The restaurant would be open daily from 10:30 a.m. to 10 p.m.
The building that Colectivo want to turn into a restaurant is a former gas station. Colectivo owners want to repurpose the structure and preserve it, according to plans submitted to the city.
The city plan commission will review the proposal Dec. 12.
“It’s an iconic little building,” said Scott Schwebel, director of marketing at Colectivo. “It would be a fun opportunity to reinvent the former Tosa Gas into something delightful for the neighborhood.”
Colectivo, previously called Alterra, has about 400 employees at 16 cafes in Milwaukee and Madison. The company’s first café opened in 1993, and has grown rapidly over the past several years, expanding into the Madison market and adding its own bakery, Troubador.
Colectivo is also planning to open a café on Chicago’s north side.
