The Chancery restaurant in Pleasant Prairie will close at the end of this year, its parent company announced in a letter to the state Department of Workforce Development.
Wauwatosa-based DeRosa Corp. notified state officials that it will shut down the Chancery in Pleasant Prairie on Dec 31. The restaurant is located inside the Double Tree by Hilton hotel at 11900 108th St.
“Our 25-year lease was up and we decided that we’re not going to continue there even though it was a very good operation for us,” said Joe DeRosa, chairman and CEO of DeRosa Corporation.
The restaurant's 77 staff members will be offered work under a new restaurant that will take The Chancery's place, said Kyle Highberg, area general manager of First Hospitality Group, an Illinois-based hotel management company.
“We are going to re-brand it and there will be a renovation of the area,” Highberg said. “Our goal is to retain the current staff that’s there.”
Highberg described the new restaurant as “casual” with a “rejuvenated menu” while paying homage to the The Chancery’s current clientele. However, Highberg said his company is not ready to announce anymore details.
DeRosa also recently closed the Waukesha Chancery location at 2100 E. Moreland Boulevard.
The Chancery in Mequon at 11046 N. Port Washington Road is the only location left. In 2015, the Milwaukee and Racine Chancery locations were closed. In 2016, the Wauwatosa Chancery was closed, and last year it was replaced by Jose’s Blue Sombrero.
DeRosa Corp. also owns the four Jose’s Blue Sombrero restaurants in southeastern Wisconsin and one Parkside 23 restaurant, which is in Brookfield.
