Mayfair Collection to get Smoke Shack, AJ Bombers, Holey Moley restaurants

Join six other restaurants operating or planned for development

Milwaukee restaurant operator Hospitality Democracy has announced it will open three of its popular restaurant concepts at the Mayfair Collection in Wauwatosa.

Barbecue restaurant Smoke Shack, burger bar AJ Bombers and Holey Moley Coffee + Doughnuts will all open Mayfair Collection locations in a 6,280-square-foot freestanding building at the Mayfair Collection development. They are scheduled to open in the late summer or early fall of 2016, joining six other restaurants operating or planned for the development.

Smoke Shack, which has a location in Milwaukee’s Historic Third Ward, will open its second location in the eastern half of the building, serving smoked meats, housemade barbecue sauces and cocktails. It will have an outdoor patio, a bar area incorporating reclaimed barn wood and a “rustic” buildout similar to its existing location.

AJ Bombers, which has existing locations in downtown Milwaukee, at Miller Park, at Summerfest and in Madison, will also have the same theme as its other restaurants, serving “p-nuts” using complicated Rube Goldberg-like systems, along with burgers and beer.

And Holey Moley, which has a location in the Third Ward, will serve coffee, doughnuts and its custard-doughnut sandwiches.

All three restaurants will have on-site parking for pick-up and catering orders near the door. Rinka Chung Architecture, Flux Design and ADK Design will design and build the restaurants.

“We could not be more pleased to join in the retail excitement that is happening in Wauwatosa,” said Joe Sorge, owner of Hospitality Democracy. “We feel our restaurants are the perfect addition to the current offerings at The Mayfair Collection. Our new locations are perfectly placed, just in front of the new Hilton Homewood Suites hotel and incorporate an attached parking garage for up to 100 vehicles.”

Hospitality Democracy also operates Onesto, Swig and Water Buffalo in the Third Ward, and has rights to Zaffiro’s Pizzeria & Bar on the east side.

Restaurant operator Bartolotta also has opened a freestanding restaurant at the Mayfair Collection, Osgoods, and plans to open three more for the second phase of the project: pub tavern ABV Social, French café Café Grace and tacqueria El Jefe. A Corner Bakery and Pizza Man restaurants are also open in the first phase of the Mayfair Collection.

The second phase of the Mayfair Collection mixed-use development is currently being built by Chicago-based HSA Commercial Real Estate northeast of U.S. Highway 45 and Burleigh Street. A 45,150-square-foot Whole Foods store recently opened in the space, and a 140-room Hilton Homewood Suites hotel and a HomeGoods store are also set to open. The first phase included 270,000 square feet of retail space anchored by Nordstrom Rack, Dick’s Sporting Goods, Saks Fifth Avenue OFF 5th, as well as the three operating restaurants.

HSA has also partnered with Fiduciary Real Estate Development Inc. to include 1,050 luxury residences in the project over seven to 10 years.
