Ryan Braun restaurant reopens with new executive chef

Ryan Braun’s Waterfront restaurant will reopen in March with new executive Chef Dominic Zumpano, former executive chef at Milwaukee’s Umami Moto.
"This is such a great opportunity for me to not only return to Milwaukee, but to also be a part of the redevelopment of the restaurant," said Zumpano.  "I share the same vision that Mike and Omar have of what a dining experience should be. We’re looking forward to opening the doors and showcasing the new look, feel and menu for the restaurant."
Ryan Braun’s Waterfront is owned by Omar Shaikh and SURG Restaurant Group partner Mike Polaski, owners of eight restaurants and bars throughout downtown Milwaukee and Brookfield.
"As we continue to revise the brand of RBWF, a menu with a strong culinary focus is important," said Polaski. "We knew right away Dominic was the guy to create a menu that was both interesting and unique to our customers. He knows the market well and we look forward to unveiling the menu."
Zumpano is a 16-year culinary veteran who has run kitchens from Maine to Arizona, and stood beside some of the most recognized chefs such as Iron Chef Winner Beau MacMillan. Zumpano will bring his Italian heritage to the menu at RBWF. He will feature cuisine with the best local products and bold flavors.
