Local hotel chefs visit urban farm

Local Marcus hotel chefs, including Mark Weber of the Pfister Hotel, Robert Ash of InterContinental Milwaukee and Brian Frakes of Hilton Milwaukee City Center recently toured Will Allen’s Growing Power Farm, 5500 W. Silver Spring Drive, to learn about and sample some of the products produced on the farm. Growing Power invited area chefs and restaurant managers to the tour to teach them about its unique growing systems, "aquaponics," and its "vermicomposting" process, a process that enriches the soil in greenhouses to enhance the quality and the flavor of the produce.
