Cousins restaurant opens in Richfield

2,000-square-foot store includes drive thru, curbside pick-up and delivery

Cousins Subs has opened a new restaurant location in Richfield, the Menomonee Falls-based chain announced Monday.

The new store, located inside a BP gas station at 3051 Holy Hill Road, is Cousins’ first Richfield location. The company has nearby stores in Jackson, Slinger, Hartford and Menomonee Falls. 

The 2,000-square-foot restaurant offers a full-service drive-thru, as well as curbside pickup, delivery and catering. Its indoor dining room seats 28 people. 

“Cousins Subs is thrilled to open its first location in the Richfield community,” said Joe Ferguson, vice president of development at Cousins Subs. “Our new guests will not only love our deli fresh and grilled to order subs and better sides, they’ll benefit from our commitment to our communities by giving back through our Make It Better Foundation.”

Cousins’ Make It Better Foundation awards grants to local nonprofits that focus on health and wellness, hunger and youth education.

The new restaurant opens with Cousins’ updated look, which includes natural wood, stone and metal accents as well as Cousins’ new logo, digital menu boards and sandwich grill, as part of the company’s 2016 rebranding initiative.

Currently, 56 of Cousins’ 97 restaurants in Wisconsin, Illinois and Indiana have been updated or newly opened with the company’s rebrand elements.

Like all restaurants, Cousins Subs took a hit at the onset of the outbreak in mid-March. However, the chain was able to maintain nearly full operations as a fast-casual concept that was already positioned around off-premise dining.

Since the start of the pandemic, four stores permanently closed and two stores opened. One store remains temporarily closed, but is expected to reopen. Prior to the pandemic, the chain operated a total of 99 stores (and growing).

Maredithe has covered retail, restaurants, entertainment and tourism since 2018. Her duties as associate editor include copy editing, page proofing and managing work flow. Meyer earned a degree in journalism from Marquette University and still enjoys attending men’s basketball games to cheer on the Golden Eagles. Also in her free time, Meyer coaches high school field hockey and loves trying out new restaurants in Milwaukee.
